Burger – Fully loaded ( Gluten Free Patty)

You decide what goes in the pot, you control the portion and the best part you develop other’s palate. When you hear the revealing stories how famous franchises process their products you become tad bit cautious. These big chains are not going to change their methods. As a mother I feel responsible for what my kids eat. Home cooking is the best way to eat healthy and safe. Plus you get the best value of your money.

Put a big and juicy burger on a plate, see the smile on kids faces and watch them eat without a single complaint. Mission accomplished. Oh! btw my daughter’s gluten allergy is the main reason I prefer home cooked meals. I need to be sure that the food is safe for her. Usually there is soaked bread in burger patties and/or they are coated with breadcrumbs. I used rice flour instead which kept the patty moist and it didn’t shrink much. If you don’t want to use rice flour you can add 2 bread slices soaked in 1/4 cup of milk.

DSC_0448                                                     ingredients: ( about 6-8 patties)

1/2 kg lean minced beef

1 big onion, roughly chopped

3-4 jalapeno slices

1 tsp salt

1/2 tsp black pepper powder

1/2 tsp red chilli powder

1/4 cup rice flour

1/4 tsp  dried thyme

1/4 tsp dried rosemary

1 egg

for pickle topping:

1 big cucumber, sliced

1 big onion, sliced

2 tbsp white vinegar

1/3 cup water

pinch of salt

1/8 tsp mustard seeds

1 tbsp brown sugar

to assemble:

6-8 burger buns

1/2 cup grated cheddar or mozzarella cheese

1 1/2 cup roughly chopped lettuce/iceberg

jalapeno slices, as required

mayonnaise, as preferred

ketchup as required

method:

Put roughly chopped onion and jalapeno slices in food processor and process for 45 seconds. Add minced meat and process for 1-2 minutes. Now add salt, black pepper, red chilli powder, dried thyme, dried rosemary and rice flour and process for another minute. Transfer the mixture to a big bowl. Add egg and mix well. Divide the mixture into 6-8 portions and shape each portion into thick patty. Shallow fry.

for pickle topping:

Combine sliced cucumber, sliced onion, vinegar, water, salt and mustard seeds in a small pan. Cover and cook on low flame for 3-4 minutes, stirring occasionally till almost all the liquid is absorbed. Add brown sugar, stir well and cook uncovered for a minute. Be careful not to let it burn. Turn the stove off and let it cool.

assemble:

Toast burger buns in a clean frying pan, you can add butter or oil if you like. Spread mayonnaise and put some chopped lettuce or iceberg. Chopped lettuce is better rather than putting a whole leaf. Place the patty, cheese, a tablespoon of pickled topping, jalapeno slices and ketchup. serve warm with french fries and coleslaw.
