There are things in life you pretend to be happy with, may be you are not-so-sure about your feelings or may be you think if you give it a chance ( and keep on giving…) you might start to actually like it or may be you are a bit apprehensive how people around you would take it. Nutella is one of such things to me. Seriously it is possible! My kids like it so I do buy it and experiment with it.
You know 1/3 of world’s hazelnut is consumed in the process of making this spread? I was thinking if chocolate is becoming rare what if the same happens to Nutella?
I really enjoyed this particular recipe; nice moist delicious cupcake topped with creamy yummy Nutella frosting. If you are into baking you’ll be a little unsure about the proportion of ingredients. Don’t worry , the batter is gonna be thinner but cupcakes will have a nice velvety texture.
ingredients: (14-16 cupcakes)
1/2 cup unsweetened cocoa,sifted
1 cup water
1 cup buttermilk
1 1/2 cups sugar
1/2 cup vegetable oil
1 1/2 tsp vanilla essence
2 1/2 cups flour
2 tsp baking powder
3/4 tsp baking soda
1/2 tsp salt
1/2 cup heavy cream
1/2 cup Nutella, melted
1/2 cup butter, at room temperature
1/2 tsp salt
1 tsp vanilla essence
100 ml whipping cream
1/3 cup Nutella
1-2 tbsp milk, more or less depending on desired consistency
2-3 cups icing sugar, more or less depending on desired consistency
Preheat the oven, 180 degree celsius. Line the muffin tin with paper cases.
Add sifted cocoa powder to a medium bowl and pour in a hot cup of water, whisk to dissolve. Let cool. Add the buttermilk to cool down mixture and then add sugar and whisk until combined. Add eggs, oil and vanilla and mix again. In a small bowl sift together flour,baking powder, baking soda and salt. Whisk this into wet mixture. Stir in heavy cream and melted Nutella until evenly mixed. Pour into cupcake cases and bake for 18 – 22 minutes or until done, rotating the pans halfway through baking time. Let cool in the pan. Remove from the pan and shift to wire rack and let cool completely before frosting.
Nutella buttercream frosting:
Beat butter, vanilla and salt together with electric mixer on medium speed until light and fluffy. Reduce speed to low and add cream, Nutella, Milk and icing sugar. Mix thoroughly to combine well. Frost as you like.
