Gluten Free Chicken Burger

After last week’s post, Gluten Free Burger Buns, we have to assemble the whole thing and fix a big, juicy and delicious burger for everyone…gluten free or not. I love to create layers of texture in food and what could be easier than a burger? Soft spongy buns, creamy and tangy sauces, crunchy lettuce and onion, tender and moist meaty patty… such a winner every time. Even though there is already a party going on in terms of textures and flavors, the hero, the meat layer still needs to hit the right notes. It needs to be firm yet juicy with spices complimenting the meat. For this recipe I processed small pieces of chicken breast instead of using minced chicken which helps retaining the shape and keeps it moist and tender.
Patty is coated with seasoned corn flour and shallow fried. Try the most amazing homemade burger buns and other varieties of burgers like Fish Fillet Burger, Grilled Peri Peri Burger, Loaded Beef Burger or Mozzarella and Jalapeno Stuffed Grilled Burger. You are welcome 🙂

Gluten Free Chicken Burger
Who doesn't like a big, juicy and tasty burger? Treat your family with this flavorful burger and be an instant hero.
Ingredients
- 1 medium onion, peeled and roughly chopped
- 5 cloves garlic, crushed
- 1 medium green chilli, de seeded
- 1/2 kg roughly chopped boneless chicken breast, pat dried
- 1/2 tsp mixed dried herbs
- 1/4 tsp dried parsley
- 3/4 tsp salt
- 1/2 tsp black pepper powder
- 1/4 tsp red chilli powder
- For Outer Coating
- 1/3 cup corn flour
- 1/4 tsp salt
- 1/4 tsp black pepper powder
- 1/4 tsp dried mixed herbs
- cooking oil for shallow frying
Instructions

Put chopped onion, crushed garlic cloves and green chilli in a food processor and run the machine for about 14-20 seconds till finely chopped.

Add chicken and process for another 20-30 seconds.

Add in dried herbs, parsley, salt, black pepper and red chilli powder. Process for few more seconds till all ingredients are well combined.

Remove the mixture from the processor and shape into desired sized 6-8 patties.

Whisk together corn flour, dried herbs, salt and black pepper in a wide plate.

Heat oil in a frying pan. Dredge and coat each patty in seasoned corn flour and shallow fry. Let each side cook for about 2-3 minutes on each side over medium flame. Do not over crowd the pan. You might be required to clean the pan in between each batch as corn flour burns quickly.

Assemble as preferred with mayonaise, lettuce, cheese slice, mustard, ketchup, onion, tomato and cucumber rings.
