3 Ingredient Chocolate Ice Cream

What’s up with the weather these days? Winter was extended, yes, fine, very well, we appreciate a lengthy winter season but then there was a draw back …. practically no spring season at all which is a bummer because summer doesn’t seem to end in most parts of the country for a long long time and this in-between-extreme-weathers, aka spring, is the time when we put away all winter stuff, revamp summer wardrobe and ease our way into summer. Just like previous three four years it didn’t happen this year either. For me winter has three stages starting from fleece blanket to blanket and then quilt and ends in reverse order that is quilt, blanket and fleece blankets. This transition ain’t happening any more. Just three weeks ago there were still quilts, not complaining at all, sudden shift in weather and bam!! its summer. Didn’t get a chance to hug my blankets good bye before packing them away. Sob! New volumes of branded summer lawn launching every other week which I think should become new calendar …. Brand xyz’s second lawn volume coming? Means it is mid April. Volume 4? Monsoon is here. We, Pakistani women, take our branded clothing, specially lawn, very seriously, let Google be our witness.

It is difficult to pull any woman away from this discussion of clothes and ice cream is the easiest and most effective distraction in any given scenario unless there is a flat 50% off on your favorite brand … all bets are off then. Besides when we think about summer related food isn’t ice cream at top of the list? A big scoop of ice cream can practically fix any mood, a refreshing finish to any meal, a perfect treat to serve your guests and so on. Commercially there are countless options to chose from and yet vanilla and chocolate remain all time favorites. Question may arise that why do we need homemade ice cream when there are so many varieties available and I would say why not!! I mean yeah getting any ice cream bar or a tub from the market is super easy but let us just admit that the excitement we get from homemade ice cream is far greater. It begins from the moment we decide/pick the flavor which may sound easy but it is not, then mixing and whipping and folding and putting in containers to freeze. Another issue comes up when there isn’t enough space in the freezer and you have to rearrange all the items. See, priorities. Life just never gets any easy. Shall I describe the agony of waiting? Waiting for the ice cream to get frozen? Just a killer right there. So there is a life lesson in making ice cream at home… it teaches you to be patient… which makes you a better and happy person… a person with ice cream! Who could be happier than that?

See what I mean. This is an extremely simple recipe from start to finish with three ingredients only. Four if you add chocolate chips which is totally optional. Instead of making a conventional body/custard for ice cream which requires a longer list of ingredients and additional work there is sweetened condensed milk which makes ice cream sweet and since there isn’t much moisture in condensed milk ice cream remains smooth and creamy without ice crystals/ crunch. Use chilled condensed milk and whipping cream for better result. If you want to make vanilla ice cream simply omit cocoa powder and add some vanilla extract to condensed milk. Whip cream and fold in to condensed milk, put in container(s) and freeze, preferably overnight. Serve with Chocolate Syrup or   Hot Fudge Sauce or Magic Shell Ice Cream Topping.

Ingredients

  • 14 oz can of sweetened condensed milk, chilled
  • 1/2 cup cocoa powder
  • 400 ml whipping cream chilled
  • 1/2 cup chocolate chips,optional

Instructions

  1. In a large mixing bowl beat together condensed milk and cocoa powder using electric beaters.

  2. Beat for about 2-3 minutes on low speed until mixed well and looks light and fluffy.

  3. In another bowl beat whipping cream with electric beatres on medium speed.

  4. Beat for about 7-10 minutes or until soft peaks form. 

  5. Whipping time may very depending on the room temperature. 

  6. Fold whipping cream in to condensed milk gently with a metal spoon. Do not use beaters as it will disturb all the air bubbles trapped during whipping and ice cream would become flat rather than light and creamy.

  7. Fold in chocolate chips if using.

  8. Pour mixture into a container, or divide in to two conatiners for quicker setting.

  9. Freeze for at least 8 hours, preferably overnight.

  10. Serve/scoop as you like.
