Gluten Free Chocolate Chip Cookies
Who doesn’t need a perfect chocolate chip cookie in his life? Nothing comes for free and nothing can be achieved without some hard work so yeah it took me a while to find a recipe that works perfectly, be approved by tough cookie critics and made me sing,
” I look up to the sky
And now the world is mine
I have known it all my life
I made it! I made it!”
(Ok I admit it, this unnecessary inclusion of song is there because it is in my head for some weird reasons)
The hind side of making something this good is that you are expected to make it way more often than you should but as Lord Farquaad from Shrek would say “It is a sacrifice I am willing to make.”
Recipe is from gluten free on a shoestring and it is pretty straight forward with routine cookie ingredients like flour, sugar, brown sugar, egg, baking soda, xanthan gum, butter, vanilla and of course chocolate chips. I haven’t tried this with any other gluten free flour blends (yet) and used King Arthur’s Gluten Free Baking mix but I am pretty sure any gluten free baking mix or gluten free all purpose flour will work well. I am totally aware of the fact that gluten free flours are sure to put a dent in your regular grocery bill so use these flours wisely, pick a recipe that you understand properly and check all the ingredients and do not substitute/over measure/under measure anything. Use fresh ingredients at room temperature and do not compromise on quality of other ingredients specially chocolate chips in this case because sub par ingredients can not yield quality products. Another thing to remember whether baking gluten free or regular is to have a proper functioning oven. No point in putting in all the time and effort when your oven’s thermostat doesn’t work and can not bake evenly. Gluten Free Chocolate Chip Cookies
This easy recipe will yield perfect chocolate chip cookies and will surely make gluten free members extremely happy!
- 2½ cups gluten free all purpose flour ( I used King Arthur's Gluten Free baking mix)
- 1 tsp xanthan gum
- ½ tsp salt
- 1 tsp baking soda
- 3/4 cup caster sugar
- 3/4 cup soft brown sugar
- 1 ½ cups semi sweet chocolate chips
- 8 tbsp unsalted butter, at room temperature
- 2 large eggs, slightly beaten
- 1 tbsp vanilla extract/essence
Preheat oven at 350 F/ 180 C. Line cookie trays with parchment paper.
In a large mixing bowl combine gluten free flour, xanthan gum, salt, baking soda, caster sugar and brown sugar. Whisk well.
Take one tablespoon from flour blend and add to chocolate chips. Set aside.
In another bowl beat butter with electric beaters for about a minute.
Add eggs and vanilla to butter and beat for another 35-45 seconds.
Pour butter and egg mixture over flour and sugar mixture and beat for about 40-50 seconds till everything is well incorporated. Dough will be thick but not stiff.
Make 24 balls from the dough, each ball would be around 1½ inch in diameter.
Arrange shaped balls on lined cookie tray, at least 2 inches apart, and press gently with fingers to flatten slightly.
Put trays with cookies arranged in the freezer for about 5 minutes. This will cool the butter in the dough and cookies will stay thick during baking.
Bake for 12 minutes and DO NOT over bake. Cookies will be golden brown around the edges and center will be light golden and set.
Remove from the oven. Let cool on the cookie sheet/tray for 5 minutes. Then transfer to a wire rack to cool completely. Store in airtight containers.
