Super Easy Gluten Free Brownie

Why are kids always hungry when they are on summer break? Why do they need a snack every other hour? My mom tells me that I should be thankful that my kids aren’t picky and ask for more. Yes, I get it..  grandmothers are known to spoil their grandkids and my mom is no different. My problem? Summer itself. Seriously the heat takes most fun out of cooking and pushes you to stay out of the kitchen. Of course that is not any child’s problem as they are quite impervious to seasonal hazards. Other dilemma is the celiac issues which doubles the work all the time.

This one is a microwave brownie which you can make with all purpose flour as regular brownie or use superfine rice flour to make it gluten free and it works perfectly both ways. Feel free to double it when using all purpose flour but for gluten free (using rice flour that is) I would recommend the given quantities to be followed as rice flour behaves different than all purpose flour. It is a no fuss/ one bowl kind of recipe and super easy and quick when you have unannounced guests or when there is a serious case of hunger pangs! Topping is optional. You can mix Nutella and cream (always a winner) or just a dallop of cream with or without cherry or any leftover frosting at hand would do ( like  Peanut Butter Frosting I used in the picture above)

Quick and easy microwave brownie that will surely satisfy gluten free chocolate cravings!

Ingredients

  • 4 tbsp white rice flour
  • 4 tbsp caster sugar
  • 2 tbsp cocoa powder
  • 1 tsp baking powder
  • 2 tbsp milk
  • 2 tbsp oil
  • 1 medium egg, slightly beaten
  • For Topping (optional) see note
  • 2 tbsp Nutella
  • 2 tbsp cream

Instructions

  1. Lightly grease a small microwave safe glass container.

  2. Combine rice flour, caster sugar, cocoa powder, baking powder, milk, oil and egg in a mixing bowl.

  3. Mix well with a whisk till well incorporated.

  4. Pour in to greased pan. Level with the back of a spoon.

  5. Microwave on high for two minutes.

  6. Remove from the microwave, check doneness with a toothpick.

  7. Let cool and frost as required before serving.

  8. For topping: Mix Nutella and cream. Spread generously over cool brownie.

Recipe Notes

NOTE: If you don't wish to use Nutella and cream, feel free to serve unfrosted or frost with what ever is at hand, like cream, sprinkles, fruit, sour cream, ice cream etc
