Grilled Cheese and Herb Burgers with Plum Chutney plus Gluten Free Burger Bun Recipe
One of the most conflicting scenarios of life is meal planning and sometimes deciding what to cook actually takes longer than cooking. *Sigh*. When ever I decide to make burgers it means the work has automatically doubled because no gluten free burgers buns available in the market plus I HAVE to do something different with burgers every single time. I simply HAVE to. It can not be regular, everyday mayonnaise, cheese, burger patty and ketchup. A little twist, a new ingredient, an unusual combo, a new sauce. That is what last week’s post Fresh Plum Chutney was about! It is a different combo with contrasting flavors, color and in terms of texture. Burger patty is very simple, ground lean beef processed with onion, Garlic Paste , dried thyme and parsley for “herby” kick and then shaped and grilled. Grilling adds depth to texture.
Yes, I use stove top grilling pan but frying pan will do the job too.
What is the point of burgers without cheese? This time I put the cheese slice over cooked burger patties and let it melt and wrap them all nice and well. Again, it is an option just like placing a slice of cheese on burger buns.
There you have it! Assemble as you like. Mayo, tomato, cucumber, onion and chutney is what I did. No lettuce this time.
I tried a new recipe for gluten free burger buns from Schar. It required their bread mix or as it is called Mix B which I don’t have and I used all purpose gluten free flour from Walmart and result was pretty good. Feel free to try my other gluten free burger bun recipe posted here and here and for regular homemade burger buns these are my all time favorite .
Easy Gluten Free Burger Buns
A quick and simple recipe for tasty gluten free burger buns.
- 300 gm Bread Mix (mix B) plus extra for rolling and shaping I used gluten free all purpose flour
- 11 gm instant yeast
- ¾ tsp xanthan gum
- 1 tsp salt
- 3 tbsp cooking oil
- 200-300 ml warm water required amount of water may vary
- 1 slightly beaten egg for brushing the buns
Combine flour, yeast, xanthan gum and salt in a mixing bowl. Stir.
Add in cooking oil.
Add in about 100 ml water and knead the dough with an electric mixer with dough hooks attached.
Keep adding water til soft dough is formed. You may no require to add all 300 ml water.
Cover and let rise for about an hour or till double in volume.
Divide the dough in 6 equal portions and roll into extra gluten free flour to shape into balls.
Line a baking sheet with parchment paper and place balls on it, leaving 2-3 inches space from all sides.
Loosely cover and let rise for another 15 minutes.
Preheat oven at 200 C.
Lightly brush the top of the buns with egg. Bake buns for 10-15 minutes till light golden.
Cool completely on a wire rack before slitting.
Grilled Cheese and Herb Burgers with Plum Chutney
Lean beef burger patty with herbs, wrapped in tasty cheese and topped with finger licking homemade fresh plum chutney. This combo of flavors is sure to hit the right notes!
- 1 big onion, roughly chopped
- 1 kg lean minced beef
- 1½ tsp salt
- 1¼ tsp freshly ground black pepper
- ¾ tsp red chilli powder
- 1½ tbsp garlic paste
- ¾ tsp dried parsley
- ¾ tsp dried thyme
- 3-4 tbsp corn flour depending on the quality of beef
- 1 large egg
- oil for grilling/frying
- cheese slices as required
- tomato, cucumber,onion as required
- 3/4 cup mayonnaise
- 3/4 cup homemade fresh plum chutney
In a food processor grind onion well.
Add lean beef mince with salt, pepper, red chilli powder, thyme, parsley, garlic paste and 3 tbsp corn flour and process for 3-4 minutes till everything is well combined.
If required add another tablespoon of corn flour for ease in binding.
Add in egg and process for 20 seconds more.
Shape the beef mixture into paties, depending on the required size. Keep in mind that patty will shrink during cooking.
Heat a grilling pan over medium flame with little oil and grill patties, roughly 3-4 minutes on each sides.
When cooked, place a slice of cheese over each patty and let it melt. About 15 seconds.
Remove from the grill pan.
To assemble, spread mayonnaise on bun and place the bun over it. Spead about a tablespoon of plum chutney.
Layer cucumber, tomato and onion rings. Top with the other half of the burger bun.
