Badami Qulfi (Almond Popsicles)
Due to some issues I am not able to write a blog post like the way I do. So here is a simple and humble qulfi recipe that requires no intro. This recipe will yield 12-14 qulfi or popsicles depending on the size of the moulds. Adding corn flour to the qulfi mixture will make it thicker and smoother plus almonds won’t sink in the bottom.
1 liter homogenized milk
3/4 – 1 cup sugar
2 – 3 green cardamoms, use seeds only
250 – 300 gm khoya
2 tsp corn flour mixed with 2 tbsp milk
Half cup crushed almonds
In a non reactive sauce pan, combine milk, sugar and cardamom seeds.
Place over low flame. Stir.
Heat it up for around 3 – 4 minutes and then add crumbled khoya.
Keep stirring at regular intervals till it reaches boiling point and a few bubbles start showing up at the surface.
Mix corn flour with milk and add to milk mixture. Keep stirring for even and smooth mixing.
Remove from heat and let it cool down to room temperature.
Add in crushed almonds.
Pour in qulfi or popsicle moulds, insert a stick.
