30 Minute Gluten Free Thin Crust Pizza (No Yeast, No Rise, No Oven)

When my daughter was diagnosed with celiac disease, it was a very shocking news and I remember being numbed for a few hours as that new scenario was quite overwhelming for me plus no one in our families had that disease and I felt clueless. All I could think was “Now What?” I am pretty sure most of us feel the same way when such news broke and I have discussed this all in detail in a chain of posts How To Begin Gluten Free Journey. On the other hand my daughter was happy. She felt special for being the only one with special dietary requirements. She was relieved that mom won’t push her to finish roti. She was excited to have rice as her staple food. She was 12. She coped well and cooperated exceptionally well. The first time she threw a tantrum was when we ordered pizza. There were chicken wings for her but at that moment, she wanted pizza. Whenever I make gluten free pizza, this back story runs like a flash back.

It has been over six years since she was diagnosed and Alhamdulillah we have come a long way since then. My gluten free diet management has evolved so much. I have learned a thing or two which I continue to share on the blog. No, I don’t have everything under control. There are times when I feel confident enough to turn any recipe into gluten free and there are times when I question my choices. Anyways, Let us get back to the post and discuss pizza. A while back I shared a recipe of No Yeast, No Rise 30 Minute Pizza which wasn’t gluten free and this gluten free version is based on that recipe. There is no yeast, no rise for this pizza either plus this one is baked without the oven. It is not even baked in a big pot over the stove flame rather it is baked in a frying pan. The technique is very simple. Heat a tawa or a simmer plate or a pan cake pan over low flame. Roll and place the dough in a greased frying pan (I used non stick), spread sauce and topping and cheese. Place this frying pan on the preheated tawa/pan. Cover the frying pan that has pizza with a lid that fits. Let it cook/bake for about 15-20 minutes and voila! There you have it. An easy no rise, no yeast, no oven stove top pizza.

How this works? Glad you asked. There is simple science behind this. While placing the frying pan on a heated plate it is not directly in contact with the flame so it bakes rather than being cooked stove top. Make sure to keep the flame very low, like on simmer. Putting a lid on is very essential. A lid that fits. It will create an oven like atmosphere and distributes dry heat evenly. Believe it or not, this really works and pizza gets baked very evenly in shortest length of time.

Although there is no yeast but it doesn’t mean there is no other leavening for the dough. We need a good amount of baking powder to help gluten free flour dough to get some air pockets inside to keep it light. Please note that gluten free flours work differently and there are so many factors like quality, how fine is the grind, proportion of different flours, humidity, how the flours are measured and handled so it might take a couple of attempts to understand how a particular flour blend is behaving. Theoretically, any gluten free baking flour should work well with this recipe and proportion. I kept it thin crust pizza because it is baked without oven and a thickly rolled dough may not bake well this way. Don’t expect it to be chewy and fluffy like No Rise Gluten Free Pizza Crust or No Knead Gluten Free Pizza Crust. This a different recipe and it works best as thin crust pizza.

A perfect thin crust pizza that requires just thirty minutes from start to finish without yeast and oven.

Ingredients

  • 1 cup gluten free baking flour (I used ASMR)
  • tsp baking powder
  • ¼ tsp caster sugar
  • ¾ tsp salt
  • tbsp olive oil or any flavorless oil
  • water for kneading
  • ¼ tsp dried mixed herbs
  • pizza sauce
  • toppings
  • shredded mozzarella cheese

Instructions

  1. Combine gluten free baking flour, baking powder, sugar, salt and oil in a food processor or in a mixing bowl.

  2. Pulse the machine. If mixing in a bowl, whisk.

  3. Gradually add water while running the machine or use electric mixer to keep kneading.

  4. Form a soft dough.

  5. Lightly grease a 10' non stick frying pan.

  6. Roll out the dough in between two layers of parchment paper or baking paper into a roughly 10' circle.

  7. Remove the upper parchment paper. Carefully transfer the dough to the greased frying pan. It would be easier to pick the rolled dough with the lower parchment paper.

  8. Put a tawa/simmer plate on stove and preheat it over low flame.

  9. Spread pizza sauce, toppings and mozzarella cheese over the crust.

  10. Sprinkle dried herbs over the top.

  11. Cover the frying pan with a lid that fits well.

  12. Place the frying pan on heated tawa/simmer plate.

  13. Let it bake for about 15-20 minutes.

  14. Remove from the pan. Slice and serve immediately.
