Wednesday Wisdom: 5 Basic Differences Between Handi and Karahi Dishes

Before we talk about the difference between karahi and handi let us address the basic similarity these two share…. They are both equally popular and most sorted dishes. Another very obvious common factor is the name of course. Both are named after the cooking utensil/pot which are being used in all Pakistani households for ages. I would say handi is a more extended form of a karahi shape wise. It is higher and hence has more depth than a karahi. Another factor that they both share is that they are not mere cooking pots, they are preferred to be used as serving dishes too. In most restaurants, meat cooked in a karahi or a handi are served in a smaller handi or karahi. And now differences:

  1. While karahi is essentially a thick metallic cooking utensil, a handi is traditionally a clay pot but it has evolved as a metal pot as well.
  2. Karahi is relatively a quicker way of cooking meat where as handi based dishes might take a little longer.
  3. Usually karahi dishes are cooked keeping the flame high or medium high and for handi usually flame is kept low to medium low.
  4. Almost all karahi dishes are cooked without using onion. Handi has no such exception.
  5. When you order a karahi in a restaurant always remember that the meat will be with bones, mostly smaller pieces and the word handi in a menu represents boneless meat. Small, boneless chunks of meat.
