One Bowl Gluten Free Banana Bread

Delicious, moist with a perfect balance of sugar and spice.. This banana bread is super easy to make in just one bowl.

  • cups ripe bananas, mashed ( roughly 4 large bananas are required plus an extra banana which is optional)
  • tsp vanilla exract
  • 1 large egg
  • 4 tbsp melted butter or cooking oil
  • ¼ cup white caster sugar
  • ¼ cup brown sugar
  • 3 tbsp honey
  • tsp baking powder
  • ½ tsp salt
  • ¾ tsp cinnamon powder
  • ¾ cup full fat milk
  • cups almond meal or almond flour
  • cups gluten free flour blend ( see notes)
  • cups gluten free oats
  1. Line a 9x5 loaf pan with parchment paper. Pre heat oven to 350 F/ 180 C.

  2. In a large mixing bowl, mash bananas.

  3. Add in vanilla extract, egg, melted butter or oil, white and brown sugar, honey, baking powder, salt, cinnamon and milk. Whisk well.

  4. Add in almond meal/flour, gluten free flour blend and oats. Stir to combine.

  5. Transfer the batter in to prepared loaf tin. Level the top with spatula.

  6. Optional: Place a length wise sliced banana on top.

  7. Bake for about an hour or an hour fifteen minutes. The top should be well gloden brown and firm to touch.

  8. Cool in the pan for about 15 minutes, remove from the pan and then transfer to a wire rack.

  9. Cool completely before slicing.

Recipe Notes

Gluten Free Flour Blend Substitute:

If there is no readymade gluten free flour blend, mix the following and use to make gluten free banana bread:  

3/4 cup brown rice flour

1/4 cup potato stach

1/8 cup white rice flour

1/8 cup tapioca flour

Measure carefully and mix them together. Will make 1 1/4 cups as required for the recipe.
